This slow cooker beef bourguignon may not be quite as rich as a bourguignon cooked slowly on the stove but it still has bags of flavour and is so convenient. It's just perfect for easy midweek meals when everyone is back at school or work.

When I first made this slow cooker beef bourguigon it was as part of a challenge. The challenge was to find a recipe just right for making once the holidays come to an end and everyone is back at school or work, the type of recipe you can make quickly or with very little effort.

This slow cooker beef bourguignon is exactly that!

I love my slow cooker and for me it really makes life easier in the evening when trying to juggle putting the children to bed, going out for a run and managing to get dinner ready for me and Mr SearchingforSpice before it gets too late!

The best thing about this slow cooker beef bourguignon

I decided to make slow cooker beef bourguignon as we all love beef bourguignon. What makes it so good is the smoked bacon lardons. They add so much flavour to the sauce along with the red wine, stock and herbs. It's a real comfort meal and one that's perfect when the weather turns colder.

This particular recipe is adapted from one on Life on Food.

What ingredients do you need for beef bourguignon?

Here's what you need:

  • 200 g smoked bacon lardons - You can buy lardons or just chop up some bacon. Pancetta is fine too and if you can't get smoked, unsmoked will also work but just won't add quite as much flavour.
  • 450 g stewing steak - Don't go for lean steak as it can go tough in the slow cooker. Something with a bit of fat works far better in a slow cooked stew.
  • 1 onion finely diced
  • 2 cloves garlic crushed
  • 200 g mushrooms quartered
  • 2 large carrots sliced into batons
  • 75 ml red wine - Traditionally beef bourguinon would be made with a red Burgundy wine. However, any red wine is fine.
  • 75 ml beef stock
  • 1 tsp thyme - You can make a bouquet garni containing all these herbs or if you don't havve the individual herbs then replace them with herbs de provence mix
  • 1 tsp rosemary
  • 1 tsp basil
  • 1 tsp parsley
  • 2 bay leaves
  • 2 tsp cornflour optional - This is for thickening the stew at the end.

Can you make this without a slow cooker?

This is my second recipe for beef bourguignon. If you don't have a slow cooker then do check out this oven cooked beef bourguignon recipe. After all, it's certainly worth having more than one recipe for a classic such as this!

You can also just adapt this recipe and instead of cooking it in the slow cooker, just pop it in the oven for 3 hours at 150C.

Can you cook this in larger batches?

Yes, you can easily make double of this recipe so it can last for more meals. The leftovers will keep well in the fridge for up to three days. Just reheat it in a saucepan, the oven or microwave before serving.

You can also freeze it for up to three months. I like to freeze it in invidividual portions so it's easy to defrost and then reheat.

  • 200 g smoked bacon lardons
  • 450 g stewing steak
  • 1 onion finely diced
  • 2 cloves garlic crushed
  • 200 g mushrooms quartered
  • 2 large carrots sliced into batons
  • 75 ml red wine
  • 75 ml beef stock
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon basil
  • 1 teaspoon parsley
  • 2 bay leaves
  • 2 teaspoon cornflour optional
  • Put the bacon lardons in a saucepan and cook until browned. Empty them into the bottom of the slow cooker then brown the beef in the same pan.

  • Empty the beef into the slow cooker and add all the other ingredients.

  • Cook on low for 7-8 hours.

  • Dissolve the cornflour in about a tablespoon of cold water. Stir it into the stew if you want to thicken it.

  • Serve with baked or mashed potato or crusty bread.
